The restaurant where I had been working this summer recently closed down, so this past week I have had a lot of free time on my hands. I constantly pin vegan recipes onto my Pinterest and so I thought I would try a few out. While I don’t really consider any dessert, other than fruit, to be healthy, I think that these couple of recipes are really great if you are a health conscious person who appreciates a bit of sweetness in their life.
Peanut Butter and Banana Oat Muffins
As I am writing this post, these muffins have been sitting in the oven for about 10 minutes. They should be delicious, and they certainly were simple to make. You will need quite a few ingredients for this one, but most of these things you probably already have at home.
For this recipe you will need:
4 cups of oats
2 ⅓ cup of almond milk
2 teaspoons cinnamon
2 pinches of salt
1 teaspoon baking powder
¼ cup sugar
2 teaspoons vanilla extract
⅓ cup maple syrup
½ cup peanut butter
2 mashed bananas
Mix all the ingredients in a large bowl and preheat the oven to 375 degrees. Spray your cupcake pan with canola oil or an equivalent, and scoop the batter into the pan. Place them in the oven for 25 minutes or until golden brown on the edges. I made 16 of these muffins and update: they were delicious.
Chocolate Avocado Truffles
This recipe I have made quite a few times. Everyone who has tried it has absolutely loved it, even though most were a bit frightened by the idea of a green avocado being one of the main ingredients.
To make this recipe you will need:
1 medium sized avocado
4 ounces of semi-sweet chocolate *make sure there is no dairy in it!!!!*
1 tablespoon coconut oil
3 tablespoons of cocoa
1 teaspoon cinnamon
Smash up the avocado, or even better, puree it. Melt the chocolate and mix it in with the avocado. After that add in just two tablespoons of cocoa, putting the remaining tablespoon aside. Let the mixture chill in the fridge for an hour. Once the mix has chilled you can begin shaping them. Use a spoon to scoop out the goodness and then roll it in your hand until it has the shape of a ball. Put the leftover the cocoa and cinnamon into a small bowl and roll the truffle in the powder until it is completely covered. Chill them for about 30 minutes to an hour before eating. Enjoy!
Peanut Butter and Chocolate Banana Ice Cream
One of the things that I used to crave most as a vegan was creamy desserts like ice cream or frozen yogurt. This recipe will certainly satisfy those cravings. This rich, cold dessert is perfect for summer and all you need are a few simple ingredients
1 ½ frozen bananas
1 ½ cup oat milk or any other milk alternative
¼ cup cocoa
2 tablespoons peanut butter
Mix all of these ingredients in your blender and voila, you have your vegan ice cream. As with any smoothie recipe, altering the ingredients to your preference it totally okay. Also, if you want to add a sweetener I would suggest maple syrup. Though, I found that this recipe really didn’t need any added sweetness as the bananas and peanut butter were sweet enough.
